Greace, a Southern thing
whilst Miss Seanna was here visiting us, I found out that she and the Vawser boys had never had Fried Okra!!!!!! this is absolutely unheard of and I decided that they would not leave Georgia without sampling some of my 'southern cooking'. Innocently I entered my kingdom (the kitchen) and took my place by the stove. Seanna came in to watch me and as I dumped a glob of crisco in the pan she let out a cry of utter horror. I stood there in a state of bewilderment wondering what I had done wrong when she finally got out "What is all that greace for!?" Here in the South we cook our homemade french fries, chicken, and Okra in a pan of hot greace. I guess that it is a southern thing?

Ahah! I asked the pethtels (they are from our west as well) what they friend things with and they said that they used crisco; well, when they cooked okra and fried chicken. Which is not very often. Oh well. My family enjoys my cooking.

LOL, when you said "Greece" I supposed you were talking about Greece as in Greek food! So then I figured out you meant grease! LOLOLOL Ok, so you were homeschooled!! That's what my kids say!!

Well...I have always lived and cooked in Alabama. It is true my mother (and her mother before her) used Crisco and also kept an aluminum can on the stovetop where they stored grease drippings from cooked bacon, sausage, and other meats. However, being somewhat more health-conscious, we cook our fried okra and green tomatoes in corn oil. All other items that require "grease" are cooked in olive oil, butter, or grapeseed oil. It works!!! Even old dogs can learn new tricks ;-)
